Add the crushed tomatoes and their liquid, the hot red pepper, and bay leaves to the pot, and bring to a boil. Add the potato, carrots, and celery, bring to a boil, and cook 5 minutes. Season lightly with salt, then stir in the cabbage and let simmer for 5 minutes. Pour the hot water into the pot and bring to a boil. Adjust the heat to a gentle boil and cook for 20 minutes.

Keeping the pot at a simmer, cook the beans until tender, 40 to 60 minutes. Season the beans with salt about 10 minutes before the end of cooking. Drain the beans, remove the bay leaves, and let the beans cool. If using fresh beans: Fill two separate pans with boiling water. Pour in the fresh beans, and cook until tender, about 4 and 8 minutes for the favas and cranberry beans respectively. Drain and refresh the beans under cold running water, and remove the outer skins from the favas. Boil the onion, bay leaves, carrot, celery, and 6 cups water in a medium saucepan for 20 minutes.

This version is a bit different, using the beet greens as well—most people think of only the beet bulb itself, but the greens are as delicious and nutritious as the root, and this is a great way to use them in a salad. It is best with small, firm beets with fresh, unblemished greens, a crisp, tart apple, and crumbly goat cheese. Roasting the beets to intensify the sweetness yields the best results. SERVES 6 10 to 12 small yellow and red beets with greens attached (about 3 pounds total) � teaspoon salt ⅓ cup extra-virgin olive oil ⅓ cup good-quality balsamic vinegar Freshly ground black pepper to taste 1 medium tart, crisp apple (such as Granny Smith) 4 ounces or so slightly aged goat cheese Preheat the oven to 400 degrees F.
